Dan Waake

Dan Waake is a bean dumpling that originated from the Hausa people in northern Nigeria. It is a staple as black peas, and many beans and peas are grown and eaten in many froms of recipes.

Ingredients

Dan waake (beans dumpling mix)
Fried onions in oil
Serving ingredients

Instructions

  1. Place a large pot of water on the stove on medium high. Let it come to a boil.
  2. In the mean time, get a mixing bowl, add all the dry ingredients bean flour, AP flour, Kuka and baking soda. Mix well the dry ingredients.
  3. Then slowly add water and mix until it forms a dough.
  4. (Pro tip: the texture of the dough should be good enough for you to be able to mold dumplings, if mixture is little bit wet, add some flour.)
  5. Once water is boiling, begin forming small balls with the Dan Waake mix and throwing them into the boiling water.
  6. Let the Dan Waake boil for up to 10-15minutes. (Pro Tip: it will double in size and float to top)
  7. While Dan Waake is cooking, place a pan with cooking oil on medium heat.
  8. Once the oil is hot, add in all sliced red onions.
  9. Let the onions fried until it’s golden.
  10. Do a quick taste test to check for doneness of the Dan Waake. (Pro Tip: make sure there is no flour rawness flavor going on in the Dan Waake).
  11. Once they are done, strain them with cold water to stop the dan Waake from continuing to cook and strain again.
  12. To serve Dan Waake
  13. Sprinkle yaaji and the fried onions in oil and mix well.
  14. You can eat it just like that
  15. or you can add the mix Dan Waake on top of salads, and serve with hard boiled eggs.
